Trim-It-Down: Slow Cooker Turkey Chili


Today's recipe comes to us from Southern Living's October 2009 issue. We tried it last week, and it was pretty good. I'm not a huge fan of corn and green peppers in my chili, so it's not my all-time favorite, but we really liked it.


Slow Cooker Turkey Chili

Prep Time: 20 minutes
Total Time: 6 hour(s) 20 minutes
Yield: Makes 4 to 6 servings

Ingredients
1 1/4 pounds lean ground turkey
1 large onion, chopped
1 garlic clove, minced
1 (1.25-oz.) envelope chili seasoning mix
1 (12-oz.) can light beer
1 1/2 cups frozen corn kernels
1 red bell pepper, chopped
1 green bell pepper, chopped
1 (28-oz.) can crushed tomatoes
1 (15-oz.) can black beans, drained and rinsed
1 (8-oz.) can tomato sauce
3/4 teaspoon salt

Toppings: shredded light Cheddar cheese, finely chopped red onion, sliced fresh jalapeños

Preparation
1. Cook first 4 ingredients in a large skillet over medium-high heat, stirring often, 8 minutes or until turkey crumbles and is no longer pink. Stir in beer, and cook 2 minutes, stirring occasionally. Spoon mixture into a 5 1/2-qt. slow cooker; stir in corn and next 6 ingredients until well blended. Cover and cook on LOW 6 hours. Serve with desired toppings.

Yummy! I'll take a bowl! I made some chili a while back. It was GONE! When it snowed or iced here in Atlanta, my family begged me to do a pot. I did and was hoping it would "stretch" oh it did til that evening! My family loves my chili. I shall try this receipe this weekend. (no snow or ice but the thought of having chili is what really counts!)Thanks for sharing
